[Healthier] Rice Krispies Treats

This week’s recipe is one of my hubby’s favorite. He LOVES Rice Krispies Treats. And by loves I mean, as soon as they are spread around the pan, he cuts one out and eats it. He doesn’t care about cooling or setting time, but instead about eating time. :)

Now the hubby is constantly asking me about making things healthier, and Rice Krispies Treats are definitely on the list. Originally, the recipe calls for butter (anywhere between a ½ stick to a full stick), but I decided to opt for coconut oil instead.

Coconut oil contains saturated fat, just like butter, but one of the differences is that the body actually processes coconut oil more effectively than butter. It contains a high amount of lauric acid, which has strong antibacterial properties. Plus, coconut oil can help manage digestive distress, regulate blood sugar, strengthen teeth and bones and strengthen your immune system. (Check out more info here.)

Well, if you aren’t convinced yet, then I guess you’ll just have to make these treats and be convinced from the taste. :) Enjoy!!

The 3 Ingredients Needed:

  • 2 tbsp of Coconut Oil
  • 1 bag of Mini Marshmallows (10.5 oz)
  • 6 cups of Rice Krispies cereal

Quick & Easy Instructions:

First, prepare a 9×13 baking dish with non-stick spray and set aside.

In a large saucepan (I use my large “pasta” pot), melt the coconut oil over medium-low heat. NOTE: The coconut oil should be in its solid form to begin.


After the oil is melted, add the marshmallows to the pan/pot. Melt those over medium-low heat and make sure to stir A LOT.



After the marshmallows have melted, remove the pan/pot from the heat and add in the cereal.


Stir until everything is well combined. Then pour into the prepared baking dish.

Spray a spatula with non-stick spray and use it to press and spread the mixture down and around the dish. NOTE:Spraying the spatula helps A LOT.


I suggest letting them cool and set for about 30 minutes. BUT my hubby cannot resist having to wait, so he digs in right away. P.S. I actually really like them warm, so I can totally understand not waiting long.
