Spinach & Bacon Quiche

For some reason, the word quiche has always frightened me. I’m not a 100% sure why exactly, but it just sounded like an impossible dish to make. It sounded like it took so much skill. Maybe because it is some crazy French word that makes it sound impossible.

Nevertheless, a few months ago, I set out on a mission to find and conquer a quiche recipe. I tried a few and the one I finally settled on is a combination of a couple of them. I took the things I really liked, threw out the things I didn’t and so have found a quiche recipe that is both easy and delicious. Since then, I have made it a few more times and it keeps coming out delicious.

[Healthier] Biscuits & Gravy

Biscuits and gravy, at least according to my hubby, are typically a pretty unhealthy meal. Surely, I thought, there must be (has to be) a way to make them healthier, right? And so my adventure began.

After searching around a little bit, I finally found a simple biscuits and gravy recipe, but decided to test out making it healthier. A few versions later, I think I have created it. It tastes great! It is husband approved! And it is healthy for sure!

The hubby and I LOVE breakfast food, especially breakfast for dinner (aka brinner)!! Growing up, brinner was a fan favorite in our household and it is one I have definitely continued in our household now. That is why the month of September is going to feature Breakfast for Dinner recipes. Though of course, you can make any of these for actual breakfast, too. :)

Growing up, we never had pancakes. Let me repeat, we never had pancakes. Instead, we always had crepes. It is one of the GREATEST meals my mom made! Don’t fret though, I was not pancake deprived…my grandpa made them quite frequently when we were at their house.

Now in the hubby and mine’s household, we do have the occasional pancakes, but we usually have crepes instead. I like how you can just eat them plain OR rolled up with syrup on top OR stuffed with Nutella, bananas and almond slices. Basically, you can eat them however you like.

Breakfast Potato Casserole

In case you have not taken note yet, Thanksgiving is a few short days away, as well as my younger brother’s birthday (he’s going to be 20!!) and some friends of ours are due with their first baby (a lil boy!!) though I’m sure not everyone had taken note of the last two facts. Nevertheless, the craziness of Turkey Day is upon us and if you’re like the hubby and I, we’re going to relax in front of the TV for a little while in the morning and watch the parade while eating some breakfast and sipping on coffee.

With that said, I love breakfast casseroles, especially on holiday mornings. I think they are a nice, easy meal to whip together and not have to slave over the stove for very long. Here’s a great recipe I’ve put together, in case you need one for Thanksgiving morning before the turkey festivities begin. Happy Thanksgiving and may you be forever thankful, not just on one day.
