Cowboy Casserole

Over the last few months, we have had A LOT of friends have babies, most of them their firsts but many of them their second or even third child. It has been so exciting and my Facebook feed has been blowing up with adorable baby pictures (keep them coming, people)!

I say this because one of my favorite things to do for new parents is be able to bring them one meal that’s prepared and one meal that is frozen. This recipe is a great frozen meal! Like fantastic!! It can be given to other people or even frozen for your own household to eat on a later date. OR I guess you could always just make it to eat that night, too ;-P

As you will be able to tell, because of the lack of pictures, it is SUPER easy to prepare and SUPER inexpensive. The only thing not so easy is you have to wait an hour for cook time. If you are going to freeze it, just prepare it in an aluminum pan instead of a glass casserole dish. Good luck!

Chicken & Stuffing

One of my favorite ways to serve my husband is to have a good meal hot and ready when he arrives home from work, or shortly thereafter. It is something that brings me joy because I know it brings him joy. I know this isn’t every wife’s mentality, and that’s fine, but it is most definitely mine.

With that said, it must mean I love to be in the kitchen and love to cook. Well, there’s a little bit of truth in the first one (I enjoy the kitchen, but I enjoy hanging with my hubby more) and there’s a WHOLE LOTTA truth in the second one (I LOVE to cook, bake, all of it!). I enjoy cooking all types of meals, big, extravagant meals, medium-labor meals and quick and easy ones, but I would have to say that quick and easy are my absolute favorites. The reasoning: I’m not still in the kitchen preparing dinner when Jordan walks through the door. We’re able to hang out while dinner finishes cooking or dinner is ready and we can sit down and enjoy a meal together instantly.

Well, I think it’s time for another quick and easy meal. I love this one because (1) stuffing is fantastic and I don’t think we should limit it to Thanksgiving and/or Christmas; (2) the chicken is super moist; (3) it is a great way to eat some veggies, especially if you have a picky eater who doesn’t like them.

Chicken Enchilada Casserole

Today’s recipe is a follow-up from last week’s chicken enchilada recipe. Don’t have a whole lot of time to whip up 12 enchiladas, including packing and rolling, why not try Chicken Enchilada Casserole instead. Aside from cooking the chicken in the crockpot all day (which requires basically zero effort on your part), this recipe takes maybe 15 minutes of prep time before going into the oven.

Just like last week’s recipe, I use a pre-made green chili enchilada sauce. If you so wish, you can substitute a homemade enchilada sauce.

Lastly, this recipe is another one that you can easily make and freeze to save for later. Just prepare it in an aluminum foil pan, cover with foil, label and throw in the freezer. OR if you want to bring someone a meal, this is a great option.

Breakfast Potato Casserole

In case you have not taken note yet, Thanksgiving is a few short days away, as well as my younger brother’s birthday (he’s going to be 20!!) and some friends of ours are due with their first baby (a lil boy!!) though I’m sure not everyone had taken note of the last two facts. Nevertheless, the craziness of Turkey Day is upon us and if you’re like the hubby and I, we’re going to relax in front of the TV for a little while in the morning and watch the parade while eating some breakfast and sipping on coffee.

With that said, I love breakfast casseroles, especially on holiday mornings. I think they are a nice, easy meal to whip together and not have to slave over the stove for very long. Here’s a great recipe I’ve put together, in case you need one for Thanksgiving morning before the turkey festivities begin. Happy Thanksgiving and may you be forever thankful, not just on one day.
